Slow Food Italia is engaged, through Slow Food Travel, in the planning and creation of a tourist offer whose local communities, made up of producers, restaurateurs, guides, experiential tourism operators, are engaged in building a new model of hospitality.
These communities represent the key to a much-needed change for the tourism sector, which, in the post-Covid era, unfortunately, sees the expansion of phenomena of depopulation of some places on the one hand and on the other, over-tourism in other places contributing to further reducing the biodiversity of many ecosystems.
It is about pursuing an imperative socio-anthropological revolution, necessary and no longer postponable, which will make sure that tourism can truly contemplate the word sustainability from an environmental, economic and social point of view.
This revolution sees food as an important key to relaunching tourism that respects the territories, the microclimates, the traditions of which local communities are custodians and spokesmen capable of involving the traveling public in unique and unrepeatable experiences.
