Life Climate Smart Chefs. The International Training Challenge Amidst Historical Recipe Books, Apps and New Generations

Life Climate Smart Chefs is the European project financed by the LIFE Program of the European Union which intends to contribute to the development and implementation of the European Climate Policy and the Farm-to-Fork (F2F) Strategy by actively involving European chefs as promoters of low-energy, nutritious and affordable emissions diets, and promoting a broad debate on food as a key tool for climate change mitigation.

The project aims at providing chefs with knowledge and tools aimed at generating change in menu design and communication with customers, increasing their awareness of climate issues. The project partners are: BARILLA FOUNDATION; ALMA; ENAIP Net; Jamk University; Nutritics.

In this scenario it is assumed that cuisine reflects the characteristics of the society in which we live. Its ability to be constantly subject to change makes it a subject of great interest.

Reading a recipe book can thus be a direct way of accessing the culture of a place.

With this cultural perspective, the recipe book “Le ricette regionali italiane” (Italian Regional Recipes) edited by Anna Gosetti della Salda, published in 1967, was reread: Can a dish from the 1960s be an example in the search for solutions to sustainability issues? To promote a healthier food system, is it always necessary to turn to the new? Can gastronomic culture itself be an active instrument and vehicle in the ongoing transition process?

This project, therefore, advertises a simple message through an approach to personal and at the same time universal sustainability: By understanding the profound meaning of the concept of gastronomy which in itself is innovation, updating, ability to adapt and integrate, rereading a recipe book can be a journey of awareness for the construction of a sustainable future, a perfect “trampoline that allows us to jump even higher”. A real “Gosetti Revolution!”
